Grub Love: Pane Bianco’s MTB Sandwich

Chris Bianco is very talented, we know. Slinging those iconic golden pies for the unyielding masses (almost) every night, the James Beard Award-wining chef’s notorious work ethic at his fabled Pizzeria Bianco has never seemed anything south of remarkable.

At Bianco’s sharper and more accessible cousin Pane Bianco, the chef manages to parlay his drive for the perfectly tailored pizza–an intuitive ratio of inspiration, meticulous ingredients and masterful execution–into one of the best sandwich shops in the city.

One of my absolutes at Pane Bianco is their peerless mozzarella, tomato and basil sandwich. Buttery, handmade buffalo mozzarella makes face time with minty basil and ripe, glossy tomatoes (both of which are house-grown), all gently pressed between doughy rounds of Bianco’s fine-tuned ciabatta-lite bread, blistered briefly in the kitchen’s sizable wood-burning oven. It’s Bianco’s nuanced skill, stockpiled for our effortless consumption.

Not one player shines brighter than its neighbor–the endgame of all moving parts; an education in simplicity done right.

Cape Cod 2010 Highlights

Times of change.

Laden with seafaring potential and New England bounty, at times the harvest delivered on Cape Cod doesn’t always match its geographic and human charms⎯even though it should.

From the area’s nutritious dirt, fertile for agriculture of all casts; its waters, perfect for stocks of fish, mollusks and crustaceans; and its chronicled fabric of colonial American, Portuguese, Italian and French Canadian pedigrees, Cape Cod should already be sucking on a silver spoon. In some cornered aspects it is, though with research. To the majority of lacquered tourists in fact, who flock to the seaside peninsula and islands each summer, I know they sure think it is. To genuine food lovers though, initial novelties of clam chowder, fried clams, lobster rolls and mom-and-pop homemade ice cream shops can all-too-often fade into gluey, chewy, overcooked and sweet beyond repair. One can paralyze quickly with this repeated cycle of gut-busting monotony. Food-wise Cape Cod as a region hasn’t always lived up to its inherent, God-given potential. Most gratefully, in the past 3-5 years however, things seem to be slowly evolving.

Smarter, sharper restaurants have begun sprouting, finally allowing the fantasy of a genuinely satisfying meal⎯after your tenth night of fried, fried and fried⎯not seem the stretch it had any longer. After spending ample summers on the Cape for the better part of the last decade, I’ve decided to expose a little run-down of such eye-openers. Albeit brief (and by no means comprehensive), the list below should help direct any visiting food enthusiast, wary of the generic trappings of stale Cape Cod eating, to brighter horizons. If for nothing else, to set off on sound footing.

Upscale, bustling cousin of the Mac’s Seafood Co.’s family of salty establishments, Mac’s Shack delivers a full sushi bar, a manned raw bar and a rotating, seasonal roster of forward-leaning menu items⎯energetic, regional fare with refreshing worldly framings. The sushi product itself is indeed some of the best found anywhere on the Cape (though not exactly a tight race due to lacking local inventory to begin with), and the outdoor bar area alone is lively and optimal for people watching, full of polite but posing WASP-y mugs⎯pretension tailored enough to be tolerable, but after a second glass of wine, nearly enjoyable. Ordered notables on my most recent visit: briny oysters; lobster risotto, rich with local corn, oyster mushrooms and mascarpone; and, a hefty crab cake, layered atop a spicy bacon and corn salsa, and a brush of chive cream.

Opening Soon: Parlor Pizzeria

Update 05/25/2009: The restaurant officially opened today (at 11am).

As devout followers have been chattering about for nearly a year now, an interesting new pizzeria has slowly begun to take form along Camelback Rd., near 20th St., called The Parlor.

Thankfully, according to co-owners Dan Mei and his son Aric Mei, our need for additional patience may finally be coming to an end. If all goes well (and on schedule), they plan to open their new restaurant within just a matter of days.

Staking claim in the charming mid-century landmark that, for over the last half-century, housed longtime local beauty institution Salon de Venus, Parlor may prove promising for more than just its menu.

The structure itself has been virtually re-built from the inside out, a process undertaken not merely for safety and soundness, but for its environmental credibility as well.

Goodbye Salon de Venus, Hello Parlor.

Dan and his son Aric (a successful local artist and designer to begin with) are themselves proudly tied to strong heritage in the local pizza landscape. It was just over 25 years ago in fact, that their family originally debuted the popular Nello’s Pizza to the Phoenix area.

Though their family is no longer officially associated with the majority of Nello’s locations (they apparently only currently own the Ahwatukee location), their influential marks on the area’s pizza landscape can never go unnoticed.

Unlike Nello’s however, don’t expect Parlor to simply be a dressed up version of its ancestors – atmosphere or food-wise. Thank this in large part to seasoned local chefs Jared Porter and Jerry Alday.

With a past resume that lists associations with the likes of Olive & Ivy, Asia de Cuba, LGO, Vincent’s on Camelback, and Scottsdale’s now non-existent James Hotel and its flagship restaurant Fiamma Trattoria, Porter has a track record of preparing high-quality, often inventive eats.

Not to be overshadowed, Alday himself holds an equally worthy resume, having experience with LGO (like, who doesn’t anymore?) as well as Zinc Bistro.

Parlor’s artisan menu intends to be simple, but special. In addition to a diverse list of pies topped with ingredients both unique and familiar, the stylish, updated space will also serve a variety of sandwiches, salads and antipasti. And as everyone also keeps pointing out – a burger “or two.”

The restaurant plans to offer both a lunch and dinner menu, the latter of which will additionally offer special full entrees. Think homemade pastas, fish and maybe a steak or two. There will also be a kids menu. Finally, a diverse selection of brews on tap in particular will be on hand to round out the experience.

Expect a full review in the coming weeks.

Bianco Recipes Profiled in Martha Stewart Living

In the current issue of Martha Stewart Living magazine, Martha’s explicit love affair with Chris Bianco shines on.

After dining at Pizzeria Bianco for the very first time while in Phoenix recently for Super Bowl XLII in early 2008, Martha Stewart experienced what so many one-time Pizzeria Bianco virgins have been gushing about now for years – pizza rapture.

As her favorite NFL team the New York Giants won in upset at the big game, Martha and her posse were enjoying a closed invitational dinner party at the famed Downtown pizzeria (read: must be nice). Since then, the domestic goddess has quite effectively become Bianco’s de facto PR representative. The accumulated endorsements by Martha Stewart has now officially trumped Oprah’s lone “Best Pizza in the Country” contest, in which Pizzeria Bianco was one of several nationwide winners a few years back. At this rate, Martha may be replacing Ms. Winfrey as our official president selector in 2012.

Mmm, or maybe not.

In any event, from appearing on her daytime network television show for a double cooking segment last year, to now being being featured in her flagship magazine Martha Stewart Living for the second time, our local pizza guru is continuing to reap the benefits of impressing an immortal lifestyle maven.

And, we can’t blame her for doing so. I know I definitely can’t get enough of the Wise Guy.
